This rustic apple pie created by the executive chefs of
Rocky Mountaineer celebrates the cuisine of the
Okanagan region of western Canada.
RUSTIC APPLE &
RHUBARB PIE
INGREDIENTS
Apple Rhubarb Filling:
2 large apples
1 cup chopped rhubarb
1 cup sugar
1 Tbsp grated fresh ginger
2 Tbsp lemon juice

¾ cup all-purpose flour
¼ cup icing sugar
1½ tsp salt
2 eggs
½ cup unsalted butter
1 pinch cinnamon
1 pinch raw sugar
METHOD

Peel, core and cut the apples into medium-sized
