                                                                          ALOO GHOBI (CAULIFLOWER
                                                                          WITH POTATOES)

                                                                          Ingredients (serves five)
                                                                          1 cauliflower, separated into florets
                                                                          2 potatoes, chopped
                                                                          2 serving spoons of vegetable oil
                                                                          1/4 tsp mustard seeds
                                                                          1-2 tsp cumin seeds
                                                                          1 medium onion, chopped
                                                                          5-6 cloves garlic, crushed
                                                                          2 medium tomatoes, chopped
                                                                          2 tsp coriander powder
                                                                          1/2 tsp turmeric powder
                                                                          1 tsp red chilli powder
                                                                          Salt to taste
                                                                          Pinch of asafoetida (you can substitute onion
                                                                          powder or garlic powder)
                                                                          Small bunch of coriander leaves, for garnishing.

                                                                          Method
                                                                          Heat the oil in a pan. Add the asafoetida and cumin
                                                                          seeds. When the seeds start sputtering, add the
                                                                          onion and fry until it is transparent.
                                                                          Add the cauliflower and potatoes and fry
                                                                          for 5 minutes.
                                                                          Add the garlic and tomatoes and mix well.
                                                                          Add all of the spices and mix well.
                                                                          Cover the pan and leave for 10 to 15 minutes
                                                                          to cook.
                                                                          Add fresh coriander leaves and serve.
