Melbourne is an incredible city of
layers; different cultures, expressions
and neighbourhoods. It’s like
travelling the world in your own
hometown. A contrast of the old and
new, this city is amazingly diverse,
from its architecture to its vibrant
markets and eateries. As a chef and
restaurateur, I believe dining out is
a form of escapism; new journeys,
tastes and experiences on a plate.
I’m so proud and excited that Gimlet
